Chocolate Zucchini Muffins

2020 Recipe Contest Honorable Mention, Sharon Herrmann


INGREDIENTS:

3 eggs

1 cup maple syrup

1 cup extra virgin oil

1 tsp vanilla

2 ½ cups chopped zucchini

2 ½ cups flour

1 TBSP cinnamon

2 tsp nutmeg

¼ tsp cloves

1 tsp salt

2 tsp baking soda

½ tsp baking powder

3 TBSP cocoa (heaping for more flavor)

¾ cup walnuts (optional)


DIRECTIONS: Mix all. Bake at 350° until a toothpick comes out clean.
